And we’ve got a recipe that will blow that routine to smithereens. Be the talk of the neighborhood with this grilled swordfish with Mojo Butter and burnt orange.

Tackling a Grilled Swordfish

It’s OK if grilled swordfish sounds intimidating. Those fish can grow up to 1000 pounds. Thankfully, you’re not the one who has to wrangle it out of the water. You just need to find the perfect cut.

Swordfish is usually sold in steak form. It’s a beautiful, white-fleshed fish with a meaty texture. Look for a mix of ivory and pink colors, with a spiral pattern in the meat.

Fishing for Flavor

Once you’ve got the perfect piece of meat, it’s time to add a little flavor. For this recipe, we’ll use our Hooked On Citrus Cuban Seasoning in two forms: as a regular seasoning for our fish and as a secret ingredient in our Mojo Butter.

What gives our Hooked On Citrus Cuban Seasoning its magic? That’s a great question. There’s a lot going on in that little bottle. Hooked On Citrus Cuban combines traditional Latin spices blended with coconut sugar, coarse sea salt, garlic and cumin. Not to mention that intense pop of orange, lime and cilantro. Add a little bit of Cuban flair to the grilled swordfish that’ll take it over the top.

Ingredients

  • 1 Pound Swordfish Steaks
  • 2 teaspoons Oil
  • 3 teaspoons Twist’d Q™ Hooked On Citrus Cuban Seasoning
  • 4 Each Orange Slices
  • 1/2 Stick Butter, unsalted
  • 1/2 teaspoon Garlic, chopped
  • 1 Pinch Orange Zest
  • 2 teaspoons Orange Juice
  • 1/2 teaspoon Lemon Juice
  • 1 teaspoon Parsley, chopped

Instructions

1.) First, you will make the Mojo butter which will take your swordfish from good to unbeatable. Allow the butter to come to room temperature, then thoroughly mix in garlic, orange zest, orange juice, lemon juice, parsley, and 1 teaspoon of Citrus Cuban Seasoning. Place butter in a piece of plastic wrap and roll into a stick about an inch wide. Twist the ends tight to form a tube with the butter. Place the butter in the refrigerator to chill.

2.) Preheat your grill to medium high heat.

3.) Coat the swordfish in oil and then evenly coat with remaining Citrus Cuban Seasoning.

4.) Oil your grill grates and place steaks on the grill.

5.) Cook for 2-3 minutes per side depending on thickness of steaks. Cook to a minimum internal temperature of 145°F when a thermometer is inserted into the thickest part of the meat.

6.) Remove steaks from the grill and allow to rest for 5 minutes.

7.) Meanwhile, place slices of orange on grill and allow to cook for 1 minute on each side allowing the sugars to caramelize.

8.) Serve the steaks with thin slices of mojo butter and a slice of burnt orange.
